One of husb’s favourite foods is french toast. So, being the amazing wife I am (like, totally), I set out to make some at home. I picked up some of Bob’s Red Mill egg replacer, which was available at one of our local supermarkets. There are lots and lots of vegan recipes that don’t use egg replacer at all, but I’m all about trying out vegan subs.
4 slices of STALE bread (I used some kind of sweet Italian bread)*
2 tbsp of egg replacer mixed well in 6 tbsp of water
1/2 c almond milk (or other non dairy milk of your choice)
1/2 tsp of vanilla extract or vanilla flavouring
pinch of nutmeg
pinch of cinnamon
*it’s REALLY important that the bread be stale: I bought bread on a Friday, used it for this recipe the following morning, and it completely dissolved in the liquid! I tried it again the next day and it was perfect.
Heat pan to medium, melt in some earth balance. Whisk all the ingredients together. Drench the bread slices in the liquid, let excess run off and then add to pan. Brown both sides. Serve sprinkled with powdered sugar and maple syrup.
