This is super simple but stunningly delicious.
Add a package of pasta (spiral is good because it holds the pesto well), to a pot of salted, boiling water. Cook for 8 mins and drain. Toss a good amount of pesto and some extra olive oil through the pasta and mix in some baby spinach leaves. Serve!*
*If you’re making this and you’re not actually vegan, this is SUPER delicious with grated parmesan.
