Spring Salad w/Mint & a Smoked Paprika Dressing

4 big handfuls of baby spinach leaves
half a telegraph cucumber, diced
half a sweet red onion, diced
1 c of halved cherry tomatoes
about 15 mint leaves, chiffonaded
cooked pasta
fake chicken chunks (or baked tofu)

Heat the pasta and chicken or tofu. Toss with the other ingredients.

1/2 c safflower oil
1/4 sherry vinegar
2.5 tsp smoked paprika
salt and pepper

Heat the oil on medium and add the smoked paprika, cook for a few minutes. Add to a jar, along with the vinegar and salt and pepper. Shake well and refrigerate for 30mins and toss with the salad ingredients and serve! (Add some fake cheese if you want – I put parmesan on mine and it was delish)
