Dijon Rosemary Faux-Chicken


Original recipe here; the following is my veganised version.

1 package of gardein fake chicken nuggets or scaloppine*
1/2 c tofutti sour cream
2 tbsp dijon mustard
1-2 cloves of garlic, minced
1 tbsp fresh rosemary, minced
1/4 c of safflower oil
salt and pepper

Whisk all the ingredients together. Slather the chicken in the sauce, place in a nonstick baking dish and bake at 400 F for about 30 mins.

*you could maybe try tofu – but make sure you freeze it, defrost, bake or press out the water and marinate it in some faux chicken stock overnight.
