Vegan Overnight Oat Parfaits


Angela over at Oh She Glows has a bunch of recipes for these crazy parfaits that are both breakfast and dessert in one. The thing is, they’re super healthy (for the most part – I make mine not quite so healthy, but you can leave the sugars and stuff out if you prefer).

Here is my take on one of her vegan parfaits:

serves 2

2/3 c rolled oats
2 tbsp chia seeds
2 c soy or almond milk
1 tsp vanilla extract/essence

Mix the above really well, cover and refrigerate overnight. Put a couple of bananas, sliced into thin rounds, in the freezer.

In the morning, add the following to your food processor or blender:

the frozen banana slices
2 tbsp peanut butter
1 heaping tsp unsweetened cocoa powder
2 tbsp brown sugar
about 1/2 c soy or almond milk (add this gradually till you get the consistency you desire)

process till super smooth and creamy, taste and adjust ‘seasonings’ – add more peanut butter or sugar or milk.

To serve: layer the oat mixture and the banana soft serve into fancy glasses or jars, top with some finely chopped toasted cashews and enjoy.

1 c rolled oats
2 tsp vanilla essence
1.5 c chocolate almond milk
3 tbsp chia seeds

soak overnight. Slice and freeze 3 bananas.

The following morning:

Place your bananas (defrost in the microwave for 10-15 secs if you don’t have a very powerful blender) in the blender along with a punnet of strawberries (remove the tops), and a tsp or 2 of powdered sugar. Blend till smooth. Alternate layers of choco-oats and strawberry banana mix. Sprinkle some shredded coconut and chopped toasted nuts on top.
