Pate w/Sunflower Seeds, Sun-dried Tomatoes and Basil

I wasn’t super impressed with this pate when I first tried it, but it definitely benefits from a night in the fridge. Great on bread, crackers, fresh veggies.

1.5 c raw sunflower seeds
12 sun-dried tomatoes
2 tbsp oil
juice and zest of one lemon
1/2 c fresh basil
1 tsp tamari
1 tsp honey
salt and pepper

Soak the sunflower seeds overnight in plenty of water. Soak the tomatoes in boiling water for 20 mins. Drain and rinse seeds, add to food processor. Drain tomatoes (reserve the liquid) and add also, along with the other ingredients. Whiz till smooth and creamy, using the reserved tomato water to reach your desired consistency. Keeps for about 5 days in the fridge.
