A great veggie side from What The Hell Does A Vegan Eat Anyway?
1 delicata squash (about 2 cups of flesh)
2 medium yellow onions
2-3 tbsp oil (divided)
pinch of nutmeg
splash of white wine (about 1 tbsp)
salt and pepper
Peel the squash, split it lengthwise and slice into half moons, about 1/2″ thick. Heat half the oil in either:
a. a cast iron skillet
b. an enamel-coated cast iron skillet
c. a regular non-stick pan (browning takes much longer)
and brown the squash (about 4-6 mins). Set aside. Slice the onions into half moons, heat the rest of the oil, add onions and cook for about 8 mins till brown. Throw everything back into the skillet (or into a roasting/baking dish), add the rest of the ingredients, toss, cover and bake at 350 F for 25 mins.
Good source of vitamin E and calcium.
