Meet the Shannons came up with this incredible recipe for soft, doughy, garlicky, cheezy biscuits – I made them for the first time at thanksgiving and they were a HIT. They’re super easy to make, and perfect paired with soup (we ate some with our black bean soup tonight).
This is half the original recipe and makes 4 biscuits, nutritional info is 1 biscuit = 1 serving.
1 c of Betty Crocker’s Original Bisquick (make sure you get the vegan one)
0.5 c plain soy milk
1 tbsp nutritional yeast
0.25 c daiya cheddar, or other fake cheese
Heat your oven to 450 F. Mix up everything except the cheese – I use and electric whisk, but a hand mixer or whatever would also work. Just make sure to blend it well so there aren’t lumps of bisquick. Then fold in the cheese. Line a cookie sheet with parchment paper and drop big spoonfuls – it should make about 4. Bake about 10 mins, depending on your oven: they’re ready when they’re golden.
Mix up:
0.25 c oil
1 minced garlic clove
pinch of garlic powder
pinch of dill
pinch of thyme
pinch of rosemary
a little salt
Brush this mixture over the biscuits as soon as you pull them out of the oven, and serve warm.
